This may sound silly, but one of the hardest things with Henry’s egg allergy has been the fact I cannot “treat” him to baked goods. Not that sugar and baked goods should be number one on any mom’s list of priorities, but when it is a egg allergy and it is a child- it is something that you are often faced with.
At three, he is getting ready to begin preschool and they regularly celebrate birthday parties. Even HIS OWN birthday cake has been a source of anxiety for me. He wants the FUN cakes readily available from the bakery and that ALL of the other kids get to eat at the party. He has proven understanding (for the most part) and probably has a better diet than anyone in our family! In the past I have provided him a graham cracker or an Oreo with frosting on it and this mostly satisfies him. In fact, the last birthday party he attended the other kids were wanting his Oreos with frosting opposed to the actual cake.
Local bakers are willing to follow a recipe I provide, but do not readily offer an egg-free allergy option.
Family and friends, try to accommodate him. They ask about substitutes and I have tried them all! Flax seed, Greek yogurt, applesauce- but none of these yielded great results. Some results were even laughable. If the mix calls for 3 or more eggs you are really going to have issues keeping the cake intact after slicing it. I made a cake with a flax seed applesauce combination and none of the kids would eat it. Egg is sadly the “glue” of any cake recipe.
Then on facebook I saw a recipe! I grabbed the two ingredients and you know what?
BEST Egg-Free Cake Recipe EVER!
Seriously. It was delicious and it held together! AND IT WAS SO SIMPLE! I tried to find the original source but was told a fan had sent it to her 🙁
This is what we used for our cake:
- 1 box of Betty Crocker Vanilla Cake Mix
- 12 oz of Cherry Coke
- Frosted with Betty Crocker Cream Cheese Frosting
Note: any brand cake mix and frosting should work. Do not add eggs, milk or oil. Add soda and bake as directed!

I am so happy to have found something that worked for us! My whole family loved it and Henry enjoyed to slices! Truly, not only was this the best egg-free cake recipe, but it couldn’t have been easier!
PLUS!!! It smelled wonderful while baking! I am excited to try more flavor combinations!
