While perusing the menu of a local cafe, I came across a similar lunch option. I knew I could do something similar, saving on the cafe-style price tag!
Spinach is a fiber rich food, with lots of benefits especially when served raw! It is a great source of vitamin C, and a powerful anti-oxidant!
Cucumbers, I just love anyway- so this offers a tasty spin on my garden favorite! They are on the Dirty Dozen list- so buy organic, if possible!
And what drew me to this recipe from the start? The capers….yum! Low in calories and another powerful anti-oxidant! (just consume in moderation, as they tend to be high in sodium).
What you need for this veggie sandwich with dill cream cheese spread!
Veggie Sandwich contents:
- 1 cucumber
- 1/2 cup of spinach
- Sliced honey wheat bread
Dill cream cheese spread:
Mix in bowl:
- 1/2 cup light onion & chives cream cheese
- 2-3 tsp of fresh dill
- 1 Tbsp. of capers rinsed & drained
Other optional ingredients to consider! Tomatoes!
To serve: Spread dill cream cheese spread across bread and layer up your veggies! Wallah! Refrigerate any left over spread for repeat performance!
